Easy, Healthy Appetizers for New Year’s

 

If you are doing a little-last minute scrambling for New Year’s Eve appetizers, I have some ideas. These appetizers are delicious, easy to prepare and blood sugar friendly.

Savory Appetizers, Slimmed Down

The following links are for moderate- to low- carb appetizers. Unlike most appetizers, they contain no butter, fatty meat, cream cheese or full-fat cheese – and trust me, you won’t miss the fat!

I’ve made these no-fail  recipes many times.

Skinny Pizza Logs

These are from the popular food blog Emily Bites. The pizza logs can be frozen and baked later, just add a couple of minutes to the bake time. They also can be assembled early in the day and refrigerated until baking. (Those who are vegetarians or sodium watchers – these baked pizza logs are delicious without the turkey pepperoni; to ramp up the flavor, add slivers of onions sauteed in olive oil.)

Pesto Cottage Cheese Dip with raw veggies (jarred pesto is available at many supermarkets.)

 

Cheese Muffins (mini)

Unlike most muffins, these are low sugar. They can be made ahead; to warm before serving, wrap the mini muffins in a paper towel and microwave for a few seconds.
